1)琴酒(英文:Gin,荷文:Jenever,也可译为金酒)是一种以谷物为原料经发酵与蒸馏制造出的中性烈酒基底,增添以杜松子为主的多种药材与香料调味后,所制造出来的一种西洋蒸馏酒。
由于琴酒的外文原名源自于它主要调味成分之一的杜松子(Juniper Berry),因此也经常被称为杜松子酒,只不过,在琴酒的种类里面有种少见的黑刺李琴酒(Sloe Gin),由于这种琴酒的调味并非使用杜松子为主,以杜松子酒的译名泛称全部的琴酒,会有点以偏盖全误导观念的疑虑,以直接音译的琴酒这称呼较能避免不必要的误解。
2)自古以来欧洲人一直使用刺柏浆果作为煮肉时的调味料,作为利尿的药物使用,或在啤酒发酵的过程中添加刺柏浆果作为苦味的来源。刺柏浆果经常在文学作品中出现,中国的翻译家不知道这种植物的名称,因其类似于小松树,故起名“杜松”,将其果实称为“杜松子”。以杜松子为调味料所制造出的酒被翻译成“杜松子酒”,是种在欧洲非常受欢迎的基础烈酒。由于刺柏的法语名称为“Genévrier”,所以杜松子酒常被简称为“Gen”,引进中国后被酒界翻译成金酒(香港和大陆)或琴酒(台湾),所以目前出现两种名称:在文学作品和词典中经常称为“杜松子酒”;而在酒吧和调酒著作中则被称为“金酒”或“琴酒”。
卡尔瓦多斯(Calvados)
这是种以苹果为原料所做出来的白兰地,法国诺曼底地方的特产酒。这并不意味此地所产的苹果白兰地,都能称为 Calvados。因为和 Cognac 的地方一样,依据 A.O.C 法严格的规定,而分有各生产地区及制法,至于在规定之外,则只能称为苹果西打酒。此地是一寒冷的地方,不适合葡栽培萄,但是对于苹果的栽培,从十六世纪就开始了,至于以苹果做成白兰地,则是十六世纪末亨利四世时代的事情。
匹斯可(Pisco)
葡萄经过发酵、蒸馏制造而成,是BELLU和CHILLY生产的蒸馏酒。颜色很淡,酒精含量约40%。主要是作为餐前酒。"PISCO"这个名字好象是从南美原著民的名字来的。
雪莉(Sherry)
雪莉酒产自西班牙西南部安达鲁西亚(Amdalusia),该地的土壤以及气候造就了雪莉酒独特的风格。它是以原料葡萄先晾干,等水分减少、糖分增加时才开始榨汁,同时为了提高酸味,会加入少许的石膏酦酵,然后再装入桶中二次酦酵,最后再加入白兰地增加酒精浓度。雪莉酒通常分为两大类,一是菲诺(Fino),不含甜份,是一个很好的饭前开胃酒。另一是Oloroso,具有甜份,通常作为饭后酒。雪莉酒的颜色从透明到深黄、棕色都有,雪莉酒的甜度是受到发酵时加入白兰地的时机所影响而有不同,越早加入则越甜,越晚加入反之则不甜,酒精浓度则是受到加入白兰地的多寡而有不同。雪莉酒有种特别的储存方式,称为Solera system,是将木桶一层层往上迭,迭成金字塔形状,最老的雪莉酒在下面,次老的放第二层,依此法往上放,酒龄越年轻的就放越上面,当从最底层的木桶取出酒后,上层酒桶中的酒会依序往下流,所以,雪莉酒以Solera system储存,年轻的酒和老酒混和,使的其所流出来的酒,永远保持一定品质。
马丁尼(Martini)
马丁尼是一杯非常有名的鸡尾酒,在所有鸡尾酒中,马丁尼调法最多,可高达两百多种以上,故人们称其为「鸡尾酒中的杰作」、「鸡尾酒之王」。马丁尼是由「琴酒」3/2OZ以及「涩苦艾酒」1/2OZ,再加上橄榄一个或柠檬皮一片作为装饰,口感锐利、深奥。马丁尼涩苦艾酒可以应个人喜好而递减至1/4OZ(Dry Martini)、1/8OZ(Very Dry Martini)、1/16OZ(Extra Dry Martini)甚至一点点,还有所谓的「Martini In and Out」,指的是苦艾酒在马丁尼杯里绕了一圈再倒出来后,才加入琴酒。基酒琴酒也可以改成伏特加酒,称之为「Vodka Martini」;若将涩苦艾酒改成甜苦艾酒,则称为「Sweet Mrtini」;假使同时加入苦艾酒以及甜苦艾酒各半,称为「Perfect Martini」。除了上述之基酒外,有人还会添加其它的酒,例如桔子苦汁(Orange Bitter)1滴等等的。还有一种很特别的调法称为中国马丁尼(Chinese Martini)是将琴酒的部分换成高梁酒来调。由此可知,马丁尼真的是五花八门,调法非常多种。
苦艾(Vermouth)
苦艾酒的主要原料是葡萄酒、药草、糖和酒精。他是用苦艾花、奎宁皮、葫荽、龙胆、肉桂、金鸡纳树皮……等等数十种含有苦味的中药材浸渍数个月之后,再掺入白葡萄酒(注∶红葡萄酒、葡萄酒亦可)所制作而成的(有时还会加蒸馏酒下去提高酒精浓度)。苦艾酒除了可以纯饮外,也常被用来调制鸡尾酒。一般苦艾酒分成两种,一种是甜苦艾酒(Sweet Vermouth or Rosso Vermouth),又可称为意大利苦艾酒,糖份占全部的10%~15%左右,故称之,其色呈暗红色,味道甘苦稍带甜味,这甜苦艾酒需陈年二年才会成熟,甜苦艾酒是调配鸡尾酒「曼哈顿(Manhattam)」的主要原料。另一种是涩苦艾酒(Dry Vermouth),又可称法国苦艾酒,其糖份占全部的4%以下,故称为涩苦艾酒(有人也称不甜的苦艾酒),其色呈白或淡青色,味甘苦较烈,这涩苦艾酒必须陈年四年才会成熟,同时也是调配鸡尾酒「马丁尼」的主要基酒。另外还有一种是介于甜苦艾酒以及涩苦艾酒之间,称之为「Brisco Vermouth」。苦艾酒通常是用在饭前时候喝的,用来增进食欲,又可消除疲劳。
龙舌兰(Tequila)
龙舌兰酒译名提吉拉,它结合了古印地安文化以及西班牙文化的结晶,它采收自一种叫龙舌兰的植物(Agave Plant)中的汁液精馏而得的酒,产自墨西哥提吉拉村。龙舌兰又分两类,其中他们有一种很特别的方式,就是把龙舌兰采收后,每个人都给他吐口水,因为口水中有酵母菌,植物中有淀粉,就会产生反应变成酒精+二氧化碳,但这种酒只会留着自己喝,不会外销,因为很臭。这种酒经过蒸馏后酒精浓度高达50%以上(White Tequila)之后,才会装瓶贩售,但是还是会有腥臭味,颜色透明。蒸馏后的龙舌兰酒再经过橡木桶储存上一年,橡木的颜色及香味就会渗到酒中,就形成了Gold Tequila,颜色呈淡淡的琥珀色。龙舌兰酒有个十分特别的饮用方法,首先将盐巴置于手背虎口上,用舌头将盐卷入口中,然后再将一小杯的龙舌兰酒一饮而尽,再拿起一小片柠檬,将果肉嚼入口中,有时龙舌兰酒也同时加冰块及柠檬一起饮用。无论是风味或饮用方法,龙舌兰酒就都非常的特别以及突出。
